Turkey Stroganoff (or, Veal)

Turkey Stroganoff (or, Veal)           10 Portions:

Ingredients:
1 kg. of Noodles, Cooked

1 kg. of Turkey Breast or, Veal Shoulder, Cubes, un-cooked
400 gm. of Mushroom, cut in halves
50 ml. of Butter or, Olive Oil
1/3 cup of Celery/Leeks, fine chopped
1 tea spoon of Garlic, Minced
200 gm. of Onions, small cubes
400 ml. of Beef home made gravy/stock or, 100 gm. of instant gravy mix, mixed with 300 ml. of cold water
100 ml. of whipping cream
1/2 cup of wine, white
100 gm. of Sour Cream
1 cup of Parsley Leaves, chopped
1/2 tea spoon of Cumin, ground
1 lt. of water or, veal or, chicken or, veal stock
1/2 cup of Parmasan Cheese
Salt-Pepper

Method:
First, in a cooking pot, cook those mushroom, onions, garlic & celery/leeks with the oil/butter, on a low heat for about 4 min. Add the wine and cook for 3 more min. Add the meat, mix it well and cook them for 4-5 more min. on a low heat. Add the water/stock. Add the cumin. Mix it well. in 2-3 min. add the gravy mix and stir it well and let it cook for the next 4-5 more min. Add the sour cream & whipping cream and cook it on a medium heat for 2 more min. Season it with salt-pepper. Serve hot with some noodles and garnish with some parmasan cheese and parsley!
