Smelt (Fish)

Smelt                  10 Portions:

Ingredients:
2 kg. of Smelt, heads off, un cooked, cleaned and dressed
10 Lemon wedges

250 gm. of Flour, any kind
salt-pepper
1 kg. oil, any kind

200 gm. of Mayonnaise
10 ml. of Olive Oil
50 gm. of Sour Cream
10 ml. of Vinegar, regular
10 gm. of brown sugar
25 gm. of Chipolte pepper, canned
25 gm. of Parsley, Chopped
salt-pepper

Method:
First, take a medium size steel bowl. Add all the red coloured ingredients. Whisk them well with a  wire whisk. Your dipping sauce is ready for the Smelt. Keep it chilled in a Fridge. Then, in another bowl take the flour& salt-pepper and toss those fish, lightly. Make sure you take off the extra flour off the fish! Deep fry those smelt, till they are golden in color. Serve hot with some dipping sauce and lemon wedge!
