Salmon Joy

Salmon Joy        10 Portions:

Ingredients:
10 servings of mashed potato or, rice (Cooked)

10 portions of salmon fillet, 5-6 oz each
2 tea spoon of corn starch (Mixed with 2 cups of cold water)
1/2 cup of (Fresh) dill leaves, chopped
1/4 cup of olive oil
2 tea spoons of butter, melted
1 tea spoon od shallots, minced
1 tea spoon of garlic, minced
4 cups of water
salt-pepper

Method:
First, cook those onions and garlic with the oil, on a very low heat for 2-3 min. Then, in a (Greased) baking tray put those salmon fillet and brush them using a pastry brush with the melted butter. Add the water in the tray (Gently). Poach/bake them in the oven for about 5 min. @ 325 Degrees F, or, till they are cooked but soft/tender. In a small metal pot cook those corn starch and the water, on a low heat, till you get a nice saucy texture, and make sure while you cooking the corn starch, keep whisking (On a low heat). Then, you pour the corn starch slurry on the fish. Take off the extra sauce from the top of the fish. Distribute those cooked garlic-onion mixture on the fish. Sprinkle some fresh dill leaves on them. Season with salt-pepper. Serve hot, with the rice/m-potatoes. Yummy.

NB: Salmon is very high in nutritious food. And, it is high in protein, and the “good fats." It also provide us with  vitamin D, b6, niacin, and selenium.
