Oven roasted root vegetables

Oven roasted root vegetables      10 Portions:

Ingredients:
500 gm. of carrots, pilled, big dices
500 gm. of red beets, pilled, big dices
300 gm. of yellow beets, pilled, big dices
300 gm. of red potatoes, un-pilled, big cubes
100 gm. of fennel roots, big dices
400 gm. of onions, big dices
100 gm. of garlic cloves
100 ml. of olive oil
1 tea spoon of rosemary flakes
1 tea spoon of thyme
1/2 tea spoon of cumin, gound
1 tea spoon of brown sugar
1/2 cup of green onions, chopped
salt-pepper

10 Portions of rice or, pasta
10 portions of meat or, eggs or toffu or, anything else (Main)

Method:
First, take a big bowl. Mix all of the aforesaid items in it, except the green onions and the salt-pepper. Let it get soaked with the mixture for about 15 min. Then, bake them in a baking tray or, in a hotel tray for 20 min. @ 325 Degrees or, till they are tender/cooked. Season with salt-pepper. Serve hot with your choice of main. Garnish the root vegetables with some green onions. Super healthy and excellent flavour!
