Porc au Vin

Porc au Vin...10 servings:


Ingredients:
2-3 kg. bay pork ribs, washed once
1 lt. white wine
1 lt. red wine
5-7 bay leaves
1/2 cup chopped garlic, fresh
1/3 cup cooking onions, chopped, fresh
1 tea spoon crack mustard
1 piece cinnamon stick
5 cloves
1 tea spoon coriander seeds, cracked
1/2 cup corn starch, slurry
2 tea spoon brown sugar
1 cup bacon, chopped (Un cooked)
3-4 tea spoons ketch up
* salt-pepper

Method:
Marinate the meat with the 2 kinds of wine, garlic, onions & bay leaves for 1 day. Then on a baking tray start cooking the meat in the oven for at least 1 hours @ 275 degrees F or till it's almost cooked. Then transfer them in anther tray which is 3-4inches deep. Add the clove, coriander seeds, marinated juice, crack mustard, cinnamon stick & bacon on a very low-medium heat for another 1 hour. Add the ketch up and the brown sugar, mix it well. Use the corn starch to give the sauce a nice and thick texture. Season with salt-pepper. Discard all the bay leaves. Serve hot.

Tropical condiments


Tropical condiments...10 servings:

NB: This is not just a condiment, it has some amazing good effects on our body, if we consume it on a regular basis and eat with our main courses as a condiment or as a side item, this will benefit us permanently from liver, kidney, blood pressure and many other health issues!

Ingredients:
2 cups organic garlic
2 cups cooking onions
2 cups organic ginger
1 cup begin olive oil
1 cup hot chills
6 cups apple cider vinegar
1 tea spoon salt
1/2 cup lemon or lime juice (Fresh)

Method:
In a food processor blend them all till they are well blended.

Strawberry chutney


Strawberry chutney...10 servings:

Ingredients:
1 kg strawberries, fresh, halves
250 gm, mango, fresh or frozen, diced
2 cups sugar, brown
1/2 cup butter
1 cup water

1/2 tea spoon salt
1/3 cup corn starch (Mixed with 1/2 cup cold water)
2 cups raisin, soaked I 1/2 cup Rum
1 cup cranberries, dry & sweetened or un-sweetened




Method:
In a cooking pot add all the green colour coded ingredients and start cooking on a low/medium heat. Add the salt, raisin & cranberries. Mix it well and then up the cooked product with the corn starch slurries. Add the vanilla essence. Chill it in the fridge for about 1 hour. Serve as a sauce with any desserts or savoury appetizer (Hot or cold)!
