Lima Bean Soup

Lima Bean Soup             10 Portions:

Ingredients:
500 gm. of Lima Beans (Soaked Overnight) & Rinsed
1.5 lt. of water or, vegetable stock
2-3 bay leaves
1/2 tea spoon of chili flakes
1 Onion, medium, cubes
3-4 Cloves of Garlic, Peeled
1 tea spoon of Turmeric, ground
2 tea spoon of Butter or, Olive Oil
1 tea spoon of Sugar
Salt-Pepper

Method:
First, take a stock pot. Cook those chili flakes, onions, garlic with the Butter/Olive Oil on a medium heat. Add the stock/water, Turmeric, Lima Beans and the bay leaves. Simmer for about 1 hour, on a medium heat. Pick up those bay leaves and discard them. Then, with am immersion blender, blend them to a nice an thick consistency. Strain them with a china cap/chinois. Add the sugar and season with salt and pepper. Serve hot with some garlic toast or, your chose of light garnish!

NB: Instead of Lima Beans you can also use the Red Lentil, Called 'Munsoor Daal' in south asian languages!
