Yummy Plantain Fries

Yummy Plantain Fries              10 servings <Snacks>:

Ingredients:
10 plantains, peeled, Rondelle cut/round cut
(Make sure after cutting them, put them immediately in cold water mixed with a bit of salt otherwise it will turn black!)
500 ml cooking oil <Any kind>
* salt-pepper
1/4 tea spoon chipotle spice
1 tea spoon brown/white sugar
2 tea spoons lemon juice, freshly squeezed
1/4 tea spoon cumin, ground
1 tea spoon Parmesan cheese

Method:
First, strain the plantain. Dry them up either with a clean cotton kitchen towel or paper towel. Deep fry those plantain. Get rid of the cooking oil as much as possible. Now, in a bowl mix and toss those plantains with the rest of the spices. Serve hot with your choice of ketch up, mayonnaise or any other preferred sauce!




Tropical wild rice salad

Tropical wild rice salad          10 servings:

Ingredients:
5 cups wild rice, cooked/ready to be used
1/2 cup red pepper, small cubes
1/3 cup cilantro/coriander, chopped
1/2 cup raisins, washed
1.5 cups mayonnaise
1/3 cup dry Apricots, small cubes
1 tea spoon curry powder (Can be replaced by turmeric powder as well!)
1/2 tea spoon lemon juice, freshly squeezed
2 tea spoon white sugar
1/2 cup dry cranberries
1/2 tea spoon rice vinegar (Can be replaced by white vinegar as well, but not recommended!)
1/4 tea spoon salt
1/4 tea spoon black pepper, ground


Method:
In a bowl mix everything till you see they all are well blended and well mixed. Make sure you use your hands not any spoons or any other utensils!  It's a very refreshing salad throughout the year!

Home made chicken rib sauce

Home made chicken rib sauce:      1 Batch:

Ingredients:
100 ml honey
400 ml ketch up
1/2 tea spoon soy sauce
1 tea spoon black pepper, ground
1/4 cup Worcestershire sauce
1 tea spoon HP sauce
1/2 tea spoon lemon/lime juice, freshly squeezed
1 tea spoon strained juice of horse radish
1/3 tea spoon oregano, ground
1 tea spoon garlic paste, fresh

Method:
In a big bowl, mix all of the mixture using a wire whisk.

This amazing home made chicken rib sauce could be used to bake/BBQ or even marinate any sort of meat.

NB: Always keep it in the fridge!
