Multi Grain-Egg Melts

Multi Grain-Egg Melts        10 Portions:

Ingredients:
10 servings of Mesclun salad or, baby spinach
10 slices of Multi Grain bread, lightly toasted, buttered

 12 eggs, cooked, chopped coarsely
1.5 cups of prosciutto or, smoked ham, chopped
1/2 cup of green onions, chopped
1 cup of shredded (Marble or, mozzarella) cheese
2 tea spoon of Parmesan cheese, ground
1/4 cup of rep pepper, minced (dried in paper towel)
1 tea spoon of smoked paprika or, (Regular paprika)
1 cup of mayonnaise
salt-pepper
1 pinch of cumin, ground
1/4 tea spoon of garlic powder

Method:
First,  in a bowl mix all the ingredients (except cheeses and paprika), using a rubber spatula. Then, distribute the mixture in 10 portions, and put it on top of the buttered bread slice. Sprinkle those 2 kinds of cheese on top. Broil them under a salamander for 1 min. or, in an oven for about 5 min @ 325 Degrees F. Take them out, sprinkle some paprika on top, and serve like that with the salads, on the side. A good source of protein and carbohydrates!  It's tasty.

NB:    If you want you can skip the ham and make it a great choice for vegetarians who eat Eggs!
