Seafood Calamata

Seafood Calamata                  10 Portions:

Ingredients:
1 kg. of Scallops, any size, raw
1 kg. of Calamari/Squid, rings, raw
1 kg. of Mussels, raw
1/2 lb. of Butter
25 ml. of Olive Oil
100 ml. of White Wine
1 cup of Leeks, fine wedges
10 tea spoon of Garlic, minced, fresh
10 pieces of Calamata Olives, Pitted & cut in half
10 wedges of Lemon

Method:
First, in a big cooking pot, put the butter and oil and saute those garlic and leeks, on a medium heat for not more than 3 min. Add the wine, mix it well. Then, add all the seafood in it. Mix them all gently. Cover them up with a tray or, something. Continue cooking for about 3 more min. on a medium heat or, till you see that all the mussels are opend up. Serve them hot in a big serving bowl along with some flavoured juice of it and garnish it with the Olives and Lemon!
