Tropical Salad with Mango

Tropical Salad       10 Portions:

Ingredients:
10 portions of Mesclun or, Baby Spinach

25 gm. of poppy seed (Regular/Black)
100 ml. of olive oil
100 gm. of Mayonnaise
25 ml. of wine vinegar
2 tea spoons of lemon/lime zest
1 tea spoon of honey
75 gm. of (Fresh/Frozen) Mango, cubes
1 tea spoon of Parmasan Cheese
salt-pepper

1 cup of Pineapple, this wedges
1 cup of Mango, cubes, fresh
10 sloces of Mandarine/Oranges

Method:
First, in a mixing bowl add those red coloured ingredients, except the salt-pepper. Whisk them well with a wire whisk and make sure they got a nice saucy texture. Then, distribute those greens (Salad) in 10 serving bowls. Drizzle those salads with the sauce you just made. Garnish with the 3 fruits. Serve chilled or, at room temperature. It's a great Sumemr item, very healthy, re-freshing and yummy!
