Potato Jhuri

Potato Jhuri      10 Portions:

Ingredients:
10 cups of steamed par boiled or, jasmine rice, cooked


2 kg. of potatoes, peeled, washed, boiled (Half way)
2 tea spoon of turmeric, powder
2 tea spoon of ginger, paste
1 tea spoon of garlic,  paste
1/2 cup of onions, chopped
1 tea spoon of black cumin ('Kalinji' in South Asian Language)
1 tea spoon of fennel seeds
1 tea spoon of red chili flakes
1/2 cup of olive oil
1 tea spoon of butter
2 bay leaves
salt-pepper

Method:
First, cook those onions, turmeric, ginger, garlic, black cumin, fennel, red chili flakes & bay leaves, with the oil on a medium heat for about 3 min. Then, using hands break down those potatoes, so that it looks like mashed but not mashed all the way! Add the potatoes there. Cook it for the next 2-3 min. Season with salt-pepepr. Add the butter at the end. Mix it well with a wooden spoon. Serve hot with rice. Super yummy!
