Halibut a la Pistachio

Halibut a la Pistachio         10 Portions:

Ingredients:
10 servings of rice or, mashed potatoes
10 lemon wedges
100 gm. of butter, melted, (cooked brown)


10 portions of halibut fish, 5-7 oz each
1 cup of pistachio, chopped
1 cup of flour, all purpose
1 cup of olive oil
1/4 cup of garlic, chopped
salt-pepper

Method:
First, dredge those fishes with the flour, and make sure you take off the extra flour from the fish. Then, on a medium-hot frying pan, cook those fish (2-3 at a time), with the oil, skin side facing down. Put some garlic on the fish, then turn over the fish, so that the fish gets cooked with the garlic and adds some flavour. Make sure you cook on a low-medium heat. Season with salt-pepper. When the serving time comes, put the fish on a serving plate and sprinkle some of those crushed pistachios on the fish. Drizzle with some melted butter as well. Serve hot with some mashed potato or, rice and garnish with the lemon. Simple but, a very elegant dish.
