Latino Pro Tortilla Chicken Soup

Latino Pro Tortilla Chicken Soup.....5 servings:


Ingredients:
1/4 cup cooking onions, chopped
1/4 cup red pepper, small cubed
3-4 tea spoons garlic, chopped/minced
1/4 cup diced tomatoes
2 tea spoons green chilis, chopped
1/2 tea spoon fresh oregano, chopped
1 tea spoon cumin, ground
1/2 cup yellow squash, small cubed
1 cup chicken breast, small cubed
1/2 cup cilantro/coriander, chopped
3-4 tea spoons Jalapenos,  chopped
2 tea spoons canola or sun flower oil
1 lt. chicken or vegetable broth
1/4 cup fresh lime juice
* salt

5 tea spoons sour cream <Garnish>
*Corn chips

Method:
With the oil saute all the  Blue colour coded ingredients on a low-medium heat. Add the rest of the ingredients. Season with salt. Garnish with sour cream and Corn Chips. Serve hot. Simple soup and delicious!

Avi's Bourbon Chicken

Avi's Bourbon Chicken.....5 servings:

Ingredients:
1/5 kg chicken breasts, medium cubed, washed & rinsed
1/2  cup soy sauce, UN salted
3-4 tea spoons garlic, minced
1/4 cup brown sugar
3-4 tea spoons ginger, minced
1/4 cup white or red wine
3-4 tea spoons sesame oil
3-4 tea spoons canola or sun flower oil
1 tea spoon corn starch (Mixed with 1/4 cup of cold water!)
1/4 tea spoon chili flakes
* salt

1/4 cup chives, chopped <For garnish>


Method:
Saute the chicken with everything on a medium heat <Except the corn starch and the wine>. Once they all are cooked add the wine and continue cooking for about 2-3 more minutes. Use the corn starch now to thicken the sauce. Season with salt. Serve hot with your choice of starch and garnish with the chives! It's a very easy and simple dish.
