Coconut Barfi

Coconut Barfi              10 Portions:

Ingredients:
1 kg. of Coconut, shredded or, minced
250 gm. of sugar
100 ml. of water
1 tea spoon of Cardamom, ground, fresh
1/4 cup of whipping cream

Method:
First, take a cooking pot. Add the water and the sugar, stir them gently, on a low-medium heat. Continue cooking like that for about 10 min. (Make sure you keep stirring them occasionally!) or, till you see that the sugar-water mixture got a nice thin, but sticky texture! Add the coconut, whipping cream and the cardamom in it. Mix it well with a strong wooden spoon. When you see that the coconut is very sticky and no liquid is present there, at this moment take it off the fire. Put it on a (Greased) thin metal tray. Let it sit there for the next 15-20 min. or, it's not too hard. Then, with a knife, cut them diagonally, which will give them a nice diamond shape. Let it chill in the Fridge and serve cold with your choice of garnishes. Yummy!
