Mango Bocconcini Salad

Mango Bocconcini Salad           10 Portions:

Ingredients:
500 gm of Bocconcini cheese, sliced/Small cubed
2 cups of mango, peeled, small cubed
1/2 cup of red pepper, seeded, small cubed
1/2 cup of green pepper, seeded, small cubed
1/2 cup of orange pepper, seeded, small cubed
2 tea spoons of red onions, minced
1/2 cup of coriander/cilantro leaves, chopped
5 tea spoons of (Fresh) lemon juice
1/2 tea spoon of garlic, minced
1/2 tea spoon of cumin, ground
1 tea spoon of honey
5 tea spoon of light Italian dressing
50 ml of olive oil
1/2 tea spoon of oregano leaves
1 cup of (Soaked) raisins
salt-pepper

Method:
In a bow, take all of the above ingredients and mix it gently, and season with salt-pepper. Serve chilled. Very yummy, lots of flavour and healthy!
