Beef Gumbo, 10 Servings:
NB: This soup was originated first time in Louisiana, USA by the Creole people during the 18th century. If you want, you can make seafood Gumbo by switching with Beef.
Ingredients:
1.5 Lt. of beef broth/stock
2 cups of beef, cooked (Sauteed), cut in 1 inch cubes
1 cup of Okra, lightly sauteed with butter
1/2 cup of onions, chopped
2-3 tea spoons of garlic, chopped
1/2 tea spoon of ginger, minced
1/2 tea spoon of ground cumin
1/2 cup of celery, small cubes
1/2 cup of carrots, small cubes
1/2 cup of red pepper & yellow or orange pepper, small cubes
1-2 bay leaves
1/4 cup of olive oil
2 tea spoon of butter
* salt-pepper
Method:
In a big stock pot, saute all the vegetables with the oil.Add all other ingredients except the Okra. Cook it for 30 min. on a medium heat. Add the Okra. Season with salt-pepper. Serve hot. Very tasty and a perfect winter soup!
