Bacon-Tuna Cutlet

Bacon-Tuna Cutlet:     (10 portions)

Ingredients:

200 gm. <Canned> tuna, rinsed
1/3rd cup boiled potatoes (Mashed)
1whole egg
3-4 tea spoons of garlic, cooking onion
1 tea spoon of ginger, minced
1/4th cup frozen green peas
1/4th cup bacon bits, fresh
1/4th cup leeks, chopped
1/4th cup coriander/cilantro, chopped
1/2 tea spoon lemon/lime juice
3-4 tea spoon heavy cream
* salt-pepper

500 ml. canola oil
2 whole eggs, beaten
1/4th cup flour
1 cup bread crumbs

Method:

In a big bowl, mix all of the ingredients except the green colour coded items. Then quickly make 20 portions of dumpling out of the mixture you just made. If you want you can also give them different shapes as you want. Now, take 3 different shallow bowls where you individually put the 2 whole eggs <Beaten>, 1/4th cup flour & 1 cup bread crumbs. Now, one by one roll the dumpling first in the flour then dip in the beaten eggs and then in the bread crumbs. Now, deep fry those dumplings to a nice and golden colour. Serve it hot with your choice of mayo, mustard, ketch up and anything else what will make you happy. It's very tasty and easy to make. Great for guests.
